The Wine
Husband and wife Marcos Attilio and Angela Mochi are passionate about bijoux, beautifully crafted wines. Brazilian by birth and now in Chile, they make wine they themselves love to drink. They and other small-scale producers have formed MOVI – the Movement of Independent Vintners. Sucre Cabernet Sauvignon is from the Colchagua Valley. Grapes are hand harvested and the wine is aged in French oak for 10 months. Better still, the wine is not filtered prior to bottling. This means none of the flavour and character are removed. On the other hand, a few harmless, natural deposits (sediment) may form in the bottle over time, so it’s best to stand the bottle upright for 24 hours and decant carefully prior to serving with rich, meaty dishes.
