The Wine
Every vintage, Dan Graham – winemaker at RedHeads, our small boutique cellar in the Barossa – assesses grape quality in vineyards close by, as well as those in the McLaren and other premium spots in South Australia. He then works with the growers to ensure that, at harvest time, he gets delivery of just the grapes he’s after. In 2016 Merlot showed best in the Limestone Coast region, where vines are cooled by ocean breezes and the fruit ripens to perfection. From the first vintage onwards this wine has been so smooth and full of juicy plum flavour that it's been a top choice for Dan and his mates to enjoy at the end of a hard day’s graft, on the back deck, hence the name. Really tasty with spicy pork, minty lamb chops or a herby casserole.
