The Wine
For several generations the Lavergne family have tended vines in and around the villages of Sauveterre de Guyenne and Saint Sulpice. Merlot is their grape of choice followed by Cabernet Sauvignon which, in a warm vintage like 2014, performs just as well as its earlier ripening cousin Merlot. It’s supple and rounded, with plenty of fleshy fruit and tannins providing good structure and length”, he says. Let it breathe for an hour in a jug or decanter and it will really open up. Serve with rack of lamb, gourmet beef burgers or pan-fried duck breast.
