The Wine
As with the famous Mas de Daumas Gassac red, this top drawer southern French white combines an eclectic range of grape varieties – though without one single variety dominating. Viognier, Chardonnay, Chenin Blanc, Petit Manseng, Marsanne, Roussanne and Petite Arvine are some of the stars, each vinified separately and assembled early in the year after the vintage. Two themes run through this wine – the first is one of intense aromatics, with concentration and richness on the palate. The second revolves around a lovely freshness, giving the wine great backbone and precision. With a couple of years’ age these two threads will come together and deliver a beautiful, integrated wine. It will be at its best when partnered with fish.
