The Wine
Thierry Lesne has long worked for us as a Flying Winemaker all over the world, but his family’s estate lies in Champagne. With plenty of experience now under his belt, he has returned there, but still escapes now and then to oversee winemaking projects for us. With his background, Thierry certainly has the expertise to make a delicious Champagne style bubbly. He worked with the team at the excellent Cave de Mancey, picking out the best parcels of creamy Chardonnay and fruity, perfumed Pinots from the Mâconnais, overseeing vinification and the secondary fermentation in bottle – just like the real deal. The Prince is a Crémant of real distinction and finesse – a delicious drop solo, with canapés and particularly good to serve at celebrations.
