The Wine
Roche Lacour winemaker Viviane Gianesini works her magic beneath the cool hills of Limoux. Here the monks of Saint Hilaire are said to have mastered sparkling wine methods in 1531, centuries ahead of Dom Pérignon. Bottles back then were fragile and didn’t travel, so the monks’ success remained a secret. After perfecting sparkling white, the cellar wanted to make a rosé, but appellation laws wouldn’t allow it. Undaunted, they petitioned the authorities and won. This pioneering pink gains its salmon hue in the same manner as the finest Champagnes, from gently pressed Pinot Noir (others merely blend red and white wine). Enjoy this exquisite rosé at your next celebration. Otherwise treat opening a bottle as a celebration in its own right!
