The Fortified Wine
David and Fiona Boyd-Armstrong commissioned their 450 litre Copper Pot Still (with two enrichment columns) from German makers Carl. It has the ability to make a variety of different spirits, should the couple go down that path in the future. To create their gin David and Fiona forage for wild clover. They also use local elderflowers when in season and elderberries to add floral notes and flavours. They are fortunate to have home-grown apples too, which contribute a bright green freshness. Traditional botanicals juniper, coriander seeds, lemon and orange peel and cassia are all added to a neutral wheat spirit to craft the gin, which is then cut with fresh water from the estate well. Made in 250 bottle batches, this is truly handcrafted.
