The Wine
Steeped in Burgundian history, 16th century Château de Mercey has a proud tradition of white wines to honour. This Chardonnay comes from the famous slopes of the Côte de Beaune and Côte Chalonnaise, from which winemaker Anne-Laure Hernette chooses the best available grapes: “I like pure, authentic wines, reflecting their terroir. It is absolutely fascinating to unveil these specificities to wine lovers!” she says. Anne-Laure uses the ancient technique of lees stirring to add texture and richness to her wines – a practice she used to the full in the super-rich whites of 2014. Heaven sent high temperatures and glorious sunshine made for a truly celebratory Chardonnay, perfect for enjoying with garlic snails, white meats or fish dishes.
